Apple Cobbler (old fashioned)

OLD FASHIONED APPLE COBBLER
2 c. white sugar
6 heaping Tbsp. flour
1 tsp. salt
6 to 8 tsp. apple pie spice
12 c. tart apples, peeled
Mix all ingredients together. Pie crust for 2 double crust pies.
Use 13 x 9 x 2-inch pan. Line pan with crust, allowing a little to
extend over edge of pan. Sprinkle lightly the bottom of pan with
sugar mixture. Toss apples with 1/2 cup of sugar mixture and
distribute the apples in the pan. Sprinkle with rest of sugar
mixture. Dot with 2 tablespoons butter. Dampen the edges of crust
with water and add top crust. Press down and crimp edges. Electric
oven 450 degrees for 50 minutes, reduce to 325 degrees for 25
minutes. Gas oven 425 degrees for 50 minutes, lower to 350 degrees
for 25 minutes. Cool thoroughly in pan.
