Apple Pie

Pie Crust

1 1/2 c. flour
3/4 t. salt
1/2 plus 1 T. shortening
4 1/2 T. ice water

Mix pie crust in usual manner, chill 1 hr./roll into 2 rounds

3 T. minute tapioca
3/4 c. brown sugar
1 t. cinnamon
1/2 t. nutmeg
1/2 t. salt
8 to 10 winsap or jonathan apples

Mix together the above ingredients, mound in pie shell.

4 T. butter
1 t. pure vanilla extract

Dot pie with butter and sprinkle with vanilla.

Shell should be filled completely with apples and slightly mounded
in center, add more apples if necessary. Top w/2nd crust, cut
creative design in top. Cover fluted edges w/strips of foil to
keep from browning too quickly.

Bake at 450 - 10 minutes. Reduce oven to 350 , bake 10 minutes.
Remove foil from edges and bake until brown (30 minutes).
