Apple Pie
2 1/2 cups whole wheat flour
1 1/2 sticks butter
1/2 tsp sea salt
5 tbs ice water
1 tbs honey
Mix all ingredients together until dough forms an elastic ball.
Peel and dice 10 medium apples (jonathan), pour the juice of 1/2
a lemon over the apples to prevent browning.
Add 2-3 tbs honey and 1 tsp mixed coriander, cinnamon, cloves, and
nutmeg.
Add 1/2 cup of chopped nuts (i.e. almonds, filberts, walnuts,
pecans) and 1/2 cup of raisins (regular, sultanines, zante currants,
golden ...) or other small cut dried fruit (apricots, mango, figs...)
Add 2 tbs finely sifted whole wheat flour and blend all the
ingredients together.
Half the pie crust dough and roll a bottom for your pie dish,
overlapping the edges slightly.
Fill in the apple mixture and cover with the rolled out remaining
dough.
Trim and seal the edges with a fork, cut a vent into the center
and bake at 380 F for 30-45 minutes. Serve with fresh cream.
